Simple Aldi Recipes: Jamaican Banana Fritters - Cheap Recipe Linky

A big part about being frugal is about minimizing waste, and one way to do this is by being creative with leftovers or fast ripening food. After we returned from vacation Sunday afternoon, I discovered that the Aldi bananas we had left behind were already over ripe. We had brought a bunch on our vacation, but I still had five overripe bananas leftover. Most often I use overripe bananas for banana bread or banana muffins, but I ended up making Jamaican Banana Fritters. I have only made them once before, and I am certainly no specialist, but they turned out pretty good.

One of our Jamaican neighbors originally introduced Jamaican Banana Fritters to my kids and they loved them, I quickly realized that it was not a healthy version of cooking with bananas though, and I think the Jamaican Banana Fritters need to come with a health warning. Jamaican cooking is very unspecific, when it comes to measurements, so as always I have had to try my way to the best result, and I have made a few adjustments to the original version of Jamaican Banana Fritters including substituting milk with fresh pressed orange juice.
