Aldi Recipes: Zucchini Latkes

Zucchini is finally becoming affordable at Aldi at 24 oz of Zucchini for $1.59. I already had some zucchini at home that needed to be used, but I still wanted to share this tasty Zucchini Latkes recipe.








The ingredients for Zucchini Latkes:

2 average sized zucchini
1 potato
1 small red onion
2 eggs
1/2 cup of flour
1/4 cup of milk
Salt and pepper to taste
Extra virgin olive oil for the pan

Simple Aldi Recipes: Jamaican Banana Fritters - Cheap Recipe Linky

A big part about being frugal is about minimizing waste, and one way to do this is by being creative with leftovers or fast ripening food. After we returned from vacation Sunday afternoon, I discovered that the Aldi bananas we had left behind were already over ripe. We had brought a bunch on our vacation, but I still had five overripe bananas leftover. Most often I use overripe bananas for banana bread or banana muffins, but I ended up making Jamaican Banana Fritters. I have only made them once before, and I am certainly no specialist, but they turned out pretty good.

One of our Jamaican neighbors originally introduced Jamaican Banana Fritters to my kids and they loved them, I quickly realized that it was not a healthy version of cooking with bananas though, and I think the Jamaican Banana Fritters need to come with a health warning. Jamaican cooking is very unspecific, when it comes to measurements, so as always I have had to try my way to the best result, and I have made a few adjustments to the original version of Jamaican Banana Fritters including substituting milk with fresh pressed orange juice.

Aldi Recipes: Florida Keys Chocolate Cake - Cheap Recipe Linky

We are longing for the Florida Keys at my house, and since the car is still at the mechanic, we have to get creative. Today we spent the first half of the day at the doctor's for my middle son's yearly check up, we had a very late lunch, and for dinner we decided to make cake. Luckily Aldi has cheap baking supplies, and combined with sales at Publix and Target we had everything we needed to make a Florida Keys inspired cake.




I found a Chocolate Cake recipe at Allrecipes.com and tweaked it a little to fit the ingredients we had had on hand.

Simple Aldi Recipes: Homemade Cinnamon Rolls

It has been a little chilly in South Florida for the past couple of days, and when it is chilly I bake. As soon as we turn our central heating system on our electrical bill doubles. So, instead I use the oven in my cooking, and we get tasty treats and the house heats up a notch.

Last night my boys and I made cinnamon rolls, and they were delicious.



Main Ingredients
2 cups of milk
1 package of dry yeast
1 cup of soft butter
4 eggs
4 tablespoons of sugar
1 teaspoon salt
8 cups of flour

Simple Aldi Recipes: Vegetarian Pizza $1.80 (3 in 1 Meal)

Homemade Vegetarian Pizza $1.80
One of my favorite things to make is vegetarian pizza, and it is usually my go to meal the day before grocery shopping. I use whatever leftover produce I have in the fridge, and with a homemade crust and some great tasting mozzarella cheese, it turns into a delicious meal. This is also a perfect Aldi Recipe, as it can be created with cheap products from Aldi.




The vegetarian pizza is a part of my 3 in 1 meal for just around $5, which makes it a very inexpensive meal.




The 3 in 1 Easy Meal

Day 1 - Plenty of time (2 hour cook/prep time)
Pizza Bolognese

Day 2 - 15 minute cook time
Spaghetti and meat sauce with homemade bread

Day 3 - 15 minute cook time
Vegetarian pizza with kitchen leftovers
