Aldi Recipes: Zucchini Latkes

Zucchini is finally becoming affordable at Aldi at 24 oz of Zucchini for $1.59. I already had some zucchini at home that needed to be used, but I still wanted to share this tasty Zucchini Latkes recipe.








The ingredients for Zucchini Latkes:

2 average sized zucchini
1 potato
1 small red onion
2 eggs
1/2 cup of flour
1/4 cup of milk
Salt and pepper to taste
Extra virgin olive oil for the pan


  1. Grate the potato, zucchini and onion
  2. Microwave the grated veggies for one minute
  3. In a separate bowl whisk the eggs, combine with flour, milk, salt and pepper
  4. Mix all ingredients 
  5. Heat up the oil in a small pan
  6. Take a spoonful of the mixture and add it to the pan, flatten it a bit.
  7. Once the bottom is turning brown, turn it.

Serve with homemade tomato sauce or sauce of your choice.  We also used a side of Aldi corn bread.

  2. that looks great.. I take the smoke sausage or Kelbasi..zucchini, yellow squash,peppers and Sweet potatos.Slice them all. Then put on Baking sheet in oven about 400 until browning a little.Need to add no Spice. It is a favorite here in Ohio.the juice from the meat is enough grease.NO need to oil pan.

  3. Those look good. Aldi cornbread is the best, too. We always have it with the red beans and rice recipe I linked up last week. I'm going to have to try these.

    We usually cut them into wedges, maybe soak them in some italian dressing and throw them on the grill when we are grilling.
