Aldi Recipes: Cherry Mango Crepes Vanilla Ice Cream - Link Up @ The Frugal Recipes Linky

I am not a fan of anything cherry flavored, and please keep all the fake cherry flavored sodas, cherry ice cream, cherry candy etc. far away from me. However, I do love fresh cherries, and the best cherries are of course those just picked from the cherry tree. In South Florida I have no cherry trees, but fortunately Aldi  had some great tasting cherries on sale last week. With the leftover cherries, I created a delicious and frugal Aldi recipe with Aldi ingredients.

My boys and I have been enjoying the cherries, but on the fourth day, I still had about 1/3 a cup of cherries that had not been eaten, and they were looking a bit dull. I did not want them go to waste, and I wanted to combine them with our abundance of mangoes from the garden, so I tried to come up with something delicious.

This week's frugal recipe is therefore Cherry Mango Crepes with Vanilla Ice Cream, and I am very pleased with the result.

The Cherry Mango Crepes Recipe:

Cherry Mango Crepes Ingredients:
(Makes 10 small crepes)
1 Mango 
1-2 eggs
2 cups flour
2 cups milk
1 teaspoon sugar
1/3 teaspoon salt
1/2 cup of cherries (cut into tiny pieces)
Butter or olive oil for cooking



Cherry Mango Crepes Directions:
  1. Cut the mango into pieces, and use a hand mixer or a food processor to blend it. 
  2. When the mango has been liquified, add an egg.
  3. Add flour, sugar, flour and milk, mix together with hand mixer.
  4. When done, carefully stir in cherry pieces
  5. Heat up a cooking pan, add a tiny bit of butter or olive oil.
  6. When hot, add a 1/2 cup of the mixture, and make sure that it is flat and fills out the pan.
  7. When one site is brown, turn it and finish cooking.
  8. Let the cherry mango crepes cool down a bit before serving with a spoonful of vanilla ice cream.




Mangolicious crepes with a subtle hint of the occasional cherry pieces combined with fabulous vanilla ice cream is a fantastic combination. The crepes have a subtle sweetness without being too sweet, and they were a success with my kids.



The Mango Cherry Crepes are perfect for a dessert when you have company. You can make them in advance and either freeze them or put them in fridge for a day until you need them. When reheating use either the microwave, or wrap them in tin foil before heating them in the oven.




I used mangoes from the garden, cherries from Aldi, and most of my baking ingredients came from Aldi as well.
