Aldi Recipes: Vegetable Pie Recipe

It has been a while since I have shared an Aldi recipe here at the Aldi Spot, but the other night I had a fantastic dinner, and I just have to share the recipe with all of you. I have not used this vegetable pie recipe (vegetable quiche) in a long time, but since I was able to get cheap feta cheese at Publix last week, I knew I had to make it.

The flaky pie dough recipe that I always used has gone lost in our last move, so I searched allrecipes.com for the best and most similar flaky pie crust recipe.


Pie Crust Ingredients


* 1 1/4 cups all-purpose flour
* 1/4 teaspoon salt
* 1/2 cup butter, chilled and diced
* 1/4 cup ice water

Pie Crust Recipe Directions

1. In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
2. Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.


Vegetable Pie Recipe

4 oz of Diced Mushrooms
3 scallions
1/4 red onion diced
2 garlic cloves chopped
1/2 cup of sour cream
2 eggs
2 - 3 tablespoons of parmesan cheese
3 oz of feta cheese (crumbled or cubes)

Vegetable Pie Recipe
  1. Make the flaky pie crust
  2. Preheat oven to 350 degrees F.
  3. Saute the veggies on a pan with 1/2 tablespoon of extra virgin olive oil
  4. Mix the eggs, add parmesan cheese, salt and sour cream
  5. Add the sauteed veggies, the feta cheese and the egg mixture to the pie crust and gently mix the ingredients.
  6. Add any remaining pie crust to the top of the flaky veggie pie.
  7. Bake the veggie pie in the oven at 350 degrees F for about 20 - 30 minutes, until the pie is golden, and the pie filling is firm.

    Aldi ingredients make this vegetable pie recipe very frugal. The ingredients used to make this vegetable pie was either bought on sale at Publix, bought at Aldi or from my own garden.

    2. Aldi stores are new to the NYC area and I visited my first not long ago. I was impressed with the quality and price of the fresh vegetables, among other staples. This pies looks delicious and healthy!
